HEALTHY CARROT SOUP

Ingredients:
  • 1 tbsp olive (almond or any nut) oil
  • 2 tsp curry powder
  • 1 clove smashed garlic
  • 1.5 inches of peeled and smashed ginger
  • 1/2 medium onion chopped
  • 1 lb carrots peeled and sliced
  • 1 bay leaf
  • 2.5 cups veggie or chicken stock 
  • 1/2 cup coconut milk

Instructions:
  1. Heat oil in pot, add curry and garlic. Cook about 30 seconds. 
  2. Add ginger, onion, carrot, bay leaf, and stock. Bring to boil. 
  3. Reduce heat, simmer until tender, about 30 minutes. Remove bay leaf, use immersion blender(or put in regular blender) and blend until smooth. 
  4. Stir in coconut milk, season to taste. I like to garnish with bacon and cranberries, but is delicious on its own or with chicken. Enjoy!
